Sichuan chili oil is a great base or “mother sauce” to have on hand. It’s a great combination of spicy from the chilies, numbing from the Sichuan peppercorns, and aromatic from the other spices. Use it as a base for other sauces – try combining it with soy sauce, oyster sauce, or roasted garlic, or as a finishing oil over cooked fish or chicken, or even over pasta.
